  • 5 tablespoons melted unsalted butter
  • 16 ounces cream cheese
  • 1 cup granulated sugar
  • 1/4 cup heavy cream
  • 2 large eggs
  • 1 large egg yolk
  • 2 teaspoons vanilla bean paste
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Crush graham crackers in a mixing bowl; mix with melted butter and press into a greased 9×9-inch baking pan.
  3. Beat softened cream cheese and sugar until smooth. Add heavy cream, eggs, egg yolk, vanilla bean paste, and salt; mix until creamy.
  4. Pour filling over crust and bake for about 45 minutes until the edges are set but the center is slightly jiggly.
  5. Allow to cool at room temperature before refrigerating for at least 4 hours or overnight.
