Ingredients

  • 2 zucchini
  • 1/4 cup egg white
  • 1/2 cup almond flour
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon basil
  • 1/2 teaspoon smoked paprika
  • Salt to taste
  • Avocado cooking spray

Instructions

  1. Cut each zucchini lengthwise into quarters.
  2. In a small bowl, lightly scramble the egg whites.
  3. On a flat plate, mix together almond flour, parmesan cheese, garlic powder, smoked paprika, and basil.
  4. Dip each zucchini fry into the egg wash then dredge in the almond flour mixture until evenly coated.
  5. Place coated fries on parchment-lined baking sheet and spray with avocado oil.
  6. Preheat air fryer to 400°F (200°C) for 2 minutes; arrange fries in air fryer without overcrowding.
  7. Cook for 6-8 minutes until golden brown; season with salt immediately after cooking.
