  • 1 cup yellow onion, finely diced

  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 1 teaspoon ground thyme
  • ¼ teaspoon ground nutmeg (optional)
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon ground black pepper
  • 16 ounce package potato gnocchi
  • 2 cups heavy cream
  • 1 tablespoon cornstarch
  • 1 cup spinach, chopped

Instructions

  1. Place chicken into the slow cooker and add onion, celery, carrots, garlic, thyme, nutmeg (if using), salt, and pepper.
  2. Pour chicken broth over the top. Cover and cook on low for 6 hours or high for 3-4 hours until chicken is cooked through.
  3. Remove chicken; shred it with two forks and return to the pot along with gnocchi.
  4. Whisk heavy cream with cornstarch until smooth; stir into the soup.
  5. Cover and cook on high for an additional 20-30 minutes until thickened.
  6. Stir in chopped spinach until wilted before serving hot.
