Ingredients

  • 2 pounds boneless skinless chicken thighs
  • Kosher salt and pepper
  • 1/3 cup apple juice or chicken broth
  • 3/4 cup brown sugar
  • 3/4 cup soy sauce
  • 2 cloves garlic, minced
  • 2 tablespoons cornstarch
  • 3 tablespoons cold water

Instructions

  1. Season the chicken thighs with kosher salt and pepper on both sides, then place them in the bottom of the crockpot.
  2. In a mixing bowl, combine apple juice (or chicken broth), brown sugar, soy sauce, and minced garlic. Stir to mix well.
  3. Pour the sauce over the chicken in the crockpot. Cover with the lid.
  4. Cook on low for 4 hours or high for 3 hours until the chicken is tender.
  5. To thicken the sauce, mix cornstarch with cold water in a small bowl until smooth. Add this slurry to the pot 30 minutes before cooking ends.
  6. Once cooked, serve the chicken over rice and garnish with sliced green onions if desired.
