- 2 pounds boneless skinless chicken thighs
- Kosher salt and pepper
- 1/3 cup apple juice or chicken broth
- 3/4 cup brown sugar
- 3/4 cup soy sauce
- 2 cloves garlic, minced
- 2 tablespoons cornstarch
- 3 tablespoons cold water
Instructions
- Season the chicken thighs with kosher salt and pepper on both sides, then place them in the bottom of the crockpot.
- In a mixing bowl, combine apple juice (or chicken broth), brown sugar, soy sauce, and minced garlic. Stir to mix well.
- Pour the sauce over the chicken in the crockpot. Cover with the lid.
- Cook on low for 4 hours or high for 3 hours until the chicken is tender.
- To thicken the sauce, mix cornstarch with cold water in a small bowl until smooth. Add this slurry to the pot 30 minutes before cooking ends.
- Once cooked, serve the chicken over rice and garnish with sliced green onions if desired.
