Ingredients
- 1 cup long-grain brown rice
- 4 1/2 to 5 1/2 cups low-sodium chicken broth
- 1 1/2 pounds boneless, skinless chicken breasts or thighs
- 1 1/2 cups diced carrots
- 1 cup frozen peas
- 1/2 cup nonfat plain Greek yogurt
- 1/2 cup sharp cheddar cheese
Instructions
- Rinse brown rice under cold water until clear.
- In a pot, bring 2 cups of chicken broth to a boil; add rinsed rice and cook for about 10 minutes. Drain and set aside.
- Lightly coat the slow cooker with nonstick spray. Add par-cooked rice, diced carrots, chopped shallots, and Dijon mustard; stir well.
- Place chicken on top; season with garlic powder, thyme, salt, and pepper.
- Pour remaining chicken broth over the mixture. Cover and cook on HIGH for 1.5 to 2 hours.
- Remove cooked chicken; stir rice and veggies until combined; return chicken to the pot.
- Stir in frozen peas and Greek yogurt for creaminess; top with cheddar cheese until melted.
