- 1/3 cup vegetable or canola oil
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar

- 2 & 1/3 cups all-purpose flour
- 5 tbsp butter (for filling)
- 2/3 cup brown sugar
- 1 & 1/4 cups chopped pecans
- 1/3 cup heavy cream
- 1 tsp vanilla extract
- 1/4 tsp cinnamon
- 1 pinch nutmeg
- 1 pinch salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter, vegetable oil, granulated sugar, and powdered sugar until smooth.
- Mix in the room temperature egg and vanilla extract until fully incorporated.
- Gradually add flour, salt, and baking powder; mix until just combined.
- Scoop out uniform cookie balls onto the prepared baking sheet and gently flatten each ball.
- In another bowl, melt butter for the filling and combine it with brown sugar, chopped pecans, heavy cream, cinnamon, nutmeg, and salt.
- Pour the pecan mixture into the center of each cookie and bake for 8–9 minutes or until lightly golden around the edges.
- Allow cookies to cool slightly before serving.
