  • 1/2 cup softened butter
  • 1/3 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 2 & 1/3 cups all-purpose flour
  • 5 tbsp butter (for filling)
  • 2/3 cup brown sugar
  • 1 & 1/4 cups chopped pecans
  • 1/3 cup heavy cream
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, vegetable oil, granulated sugar, and powdered sugar until smooth.
  3. Mix in the room temperature egg and vanilla extract until fully incorporated.
  4. Gradually add flour, salt, and baking powder; mix until just combined.
  5. Scoop out uniform cookie balls onto the prepared baking sheet and gently flatten each ball.
  6. In another bowl, melt butter for the filling and combine it with brown sugar, chopped pecans, heavy cream, cinnamon, nutmeg, and salt.
  7. Pour the pecan mixture into the center of each cookie and bake for 8–9 minutes or until lightly golden around the edges.
  8. Allow cookies to cool slightly before serving.
