			- 3–4 ripe heirloom tomatoes
 - 3–4 Kirby cucumbers or 1 thin English cucumber
 - 1/3 red onion (sliced thinly)
 - 1 tbsp fresh dill (or herb of your choice)
 - 2 tbsp red wine vinegar
 - 3 tbsp extra virgin olive oil
 - ½ tsp Dijon mustard
 - Salt to taste
 
Instructions
- In a small mason jar, combine red wine vinegar, olive oil, Dijon mustard, and salt. Shake until emulsified.
 - Using a mandolin or sharp knife, slice cucumbers, tomatoes, and red onions thinly.
 - In a salad bowl, combine all sliced ingredients and top with fresh dill.
 - Add 2 tablespoons of vinaigrette to the salad and toss gently to combine; adjust dressing to taste.
 - Serve immediately for optimal freshness.
