  • 1/2 cup buttermilk
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 tsp almond extract
  • 3/4 cup white granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 cups cherries (fresh or canned)
  • 1 tbsp corn starch
  • 1/2 cup sliced almonds

Instructions

  1. Preheat oven to 350°F (177°C) and line an 8½-inch loaf pan with parchment paper.
  2. In a large bowl, combine eggs, Greek yogurt, buttermilk, melted butter, vanilla extract, almond extract, and sugar. Mix until well combined.
  3. In another bowl, sift together flour, baking powder, and salt; then fold into the wet mixture until just combined.
  4. Toss pitted cherries with corn starch and fold into the batter along with sliced almonds.
  5. Pour batter into prepared pan, reserving some cherries and almonds for topping.
  6. Bake for about 50 to 60 minutes or until a toothpick comes out clean.
  7. For the glaze, whisk confectioner’s sugar with cream and almond extract until smooth; drizzle over cooled bread.
