  • 1 lb salmon, cubed
  • 1 ½ cup uncooked sushi rice
  • 3 large nori sheets
  • 1 tbsp light soy sauce
  • 1 tbsp Kewpie mayo
  • 1 tbsp Sriracha
  • Cooking spray
  • Furikake and green onions for garnish

Instructions

  1. Cook sushi rice according to package instructions. In a microwave-safe bowl, mix rice vinegar and sugar; heat until dissolved. Mix into cooked rice and set aside.
  2. Preheat the oven to 400°F (200°C).
  3. In a mixing bowl, combine cubed salmon with soy sauce, Kewpie mayo, sriracha, and sesame oil.
  4. Cut nori sheets into squares that fit muffin tins and lightly grease the tins with cooking spray.
  5. Press a spoonful of sushi rice into each nori square followed by a layer of the salmon mixture.
  6. Bake for about 15 minutes or until the salmon is cooked through and tops are golden brown.
  7. Let cool slightly before garnishing with furikake and chopped green onions; serve immediately.
