  • 1 small butternut squash (peeled and chopped)
  • 2 sweet potatoes (peeled and chopped)
  • 1 yellow onion (sliced)
  • 3 cloves garlic (peeled)
  • 2 tablespoons olive oil
  • 400 ml full-fat coconut milk
  • 750 ml vegetable or chicken stock
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon chili powder
  • 1 teaspoon chili flakes
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by peeling and chopping the butternut squash and sweet potatoes into small cubes. Slice the onion and peel the garlic cloves.
  2. In a large pot, heat olive oil over medium heat. Add sliced onion and sauté until translucent (about 5 minutes). Add minced garlic.
  3. Stir in butternut squash and sweet potato; cook for another 5 minutes while stirring.
  4. Sprinkle in spices—cumin, cinnamon, chili powder, chili flakes—along with salt and pepper; mix well.
  5. Pour in vegetable or chicken stock until all ingredients are submerged. Bring to a boil then reduce heat to medium-low; cover with a lid.
  6. Simmer for about 20 minutes until vegetables are tender when pierced with a fork.
  7. Remove from heat; blend until smooth using an immersion blender or regular blender.
  8. Serve in bowls with reserved coconut milk drizzled on top if desired.
