  • 1 tablespoon vegetable oil
  • 1 teaspoon vegetable oil (separated)
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
  • 2 teaspoons minced garlic
  • 1/4 cup low-sodium chicken broth
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 1/2 cups green beans, trimmed and cut into 1-inch pieces
  • 2 teaspoons corn starch
  • Salt and pepper, to taste

Instructions

  1. Prepare the green beans by trimming and cutting them into 1-inch pieces. Also, cut the chicken breast into bite-sized chunks and mince the garlic.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Sauté the green beans for about 5 minutes until tender yet crisp, then remove and set aside.
  3. In the same skillet, add another teaspoon of oil if needed and cook the chicken chunks for 5-7 minutes until browned. Add garlic during the last minute.
  4. Mix soy sauce, honey, chicken broth, cornstarch, salt, and pepper in a bowl to create the sauce.
  5. Pour the sauce over the cooked chicken in the skillet, stirring well to coat. Add back in the sautéed green beans and cook for an additional 3-4 minutes until heated through.
