- 1 tablespoon vegetable oil
- 1 teaspoon vegetable oil (separated)
- 1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
- 2 teaspoons minced garlic
- 1/4 cup low-sodium chicken broth
- 1/4 cup soy sauce
- 3 tablespoons honey
- 2 1/2 cups green beans, trimmed and cut into 1-inch pieces
- 2 teaspoons corn starch
- Salt and pepper, to taste
Instructions
- Prepare the green beans by trimming and cutting them into 1-inch pieces. Also, cut the chicken breast into bite-sized chunks and mince the garlic.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Sauté the green beans for about 5 minutes until tender yet crisp, then remove and set aside.
- In the same skillet, add another teaspoon of oil if needed and cook the chicken chunks for 5-7 minutes until browned. Add garlic during the last minute.
- Mix soy sauce, honey, chicken broth, cornstarch, salt, and pepper in a bowl to create the sauce.
- Pour the sauce over the cooked chicken in the skillet, stirring well to coat. Add back in the sautéed green beans and cook for an additional 3-4 minutes until heated through.
