  • 4 hard-boiled eggs (peeled and chopped)
  • 1/2 cup hamburger dill pickles (chopped)
  • 2 Tbsp hamburger dill pickle juice
  • 1/2 cup Vidalia or sweet yellow onion (finely minced or grated)
  • 1 cup mayonnaise (preferably Dukes or Hellman's)
  • 1/4 cup yellow mustard
  • 2 tsp kosher salt
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
  • dash paprika (for garnish)

Instructions

  1. Boil the potatoes in salted water for about 10 minutes until tender. Drain and let cool slightly.
  2. In a large mixing bowl, combine mayonnaise, mustard, onion, pickles, hard-boiled eggs, salt, and pepper.
  3. Gently mash the cooled potatoes in the pot 3–4 times to achieve a creamy texture.
  4. Fold the mashed potatoes into the dressing mixture until well combined.
  5. Garnish with a dash of paprika if desired. Refrigerate before serving chilled.
