- 1 lb lean ground beef (90% lean)
- 2 Tbsp extra virgin olive oil
- ½ yellow onion, diced
- 3 bell peppers (your choice of colors), diced
- 3 cloves garlic, minced
- 1 Tbsp fresh oregano or 1 tsp dried oregano
- 1½ tsp chili powder
- 1 tsp ground cumin
- 1 tsp paprika
- ¼ tsp black pepper
- 1 Tbsp tomato paste
- ½ cup long grain white rice (dry/uncooked)
- 1 cup beef broth
- 1 can (15 oz) fire-roasted diced tomatoes (undrained)
- ½ cup shredded cheddar cheese
Instructions
- Heat a large skillet over medium-high heat and add olive oil. Sauté diced onion and bell peppers until softened, about 3–4 minutes.
- Stir in minced garlic and oregano until fragrant, about 30 seconds. Add ground beef along with chili powder, cumin, paprika, salt, and black pepper. Cook until beef is browned and no longer pink.
- Mix in tomato paste, fire-roasted tomatoes (with juice), uncooked rice, and beef broth. Bring to a boil, reduce heat to low, cover, and simmer for 15–18 minutes until rice is tender.
- Once cooked, stir gently and sprinkle shredded cheddar cheese on top before serving.
