Description

Ingredients

  • 454 g pizza dough
  • 120 ml extra virgin olive oil
  • 50 g Parmesan cheese, shredded
  • 25 g fresh spinach leaves, packed loosely
  • 25 g fresh basil leaves, packed loosely
  • 2 garlic cloves
  • Freshly ground black pepper, to taste
  • Kosher salt, to taste
  • 60 ml chopped walnuts
  • 120 g feta cheese, crumbled
  • 227 g mozzarella cheese, shredded
  • 397 g canned artichoke hearts, drained and quartered
  • 2 heads broccoli
  • Olive oil or nonstick spray for your pan

Instructions

  1. Preheat the oven to 220°C.
  2. Chop broccoli into small florets and steam in a microwave-safe bowl with water for 3-4 minutes until tender. Drain and set aside.
  3. In a food processor, blend walnuts, garlic, basil, spinach, Parmesan cheese, olive oil, salt, and pepper until smooth to create the pesto.
  4. Spread the pizza dough on a pan and layer half of the pesto on top.
  5. Sprinkle mozzarella cheese over the pesto followed by steamed broccoli and artichokes. Add remaining mozzarella and crumbled feta.
  6. Bake for 25 to 35 minutes until the crust is golden brown. Let cool slightly before slicing.
