  • 1/8 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cinnamon
  • 5 tbsps unsalted butter, softened
  • 1/2 cup granulated white sugar
  • 2 egg whites, at room temperature
  • 1 tsp vanilla extract
  • 1/2 cup eggnog, at room temperature
  • 1/2 cup unsalted butter, softened
  • 4 oz cream cheese, cold
  • 2 1/2 cups powdered sugar, sifted
  • 1/21 tsp ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a mixing bowl, whisk together cake flour, baking powder, salt, nutmeg, and cinnamon.
  3. In another bowl, cream softened butter and sugar until fluffy. Add egg whites one at a time, followed by vanilla extract.
  4. Gradually mix in the eggnog until well combined.
  5. Slowly fold dry ingredients into the wet mixture until just combined.
  6. Divide batter into liners and bake for about 16 minutes or until a toothpick comes out clean.
  7. Cool completely on a wire rack before frosting.
  8. For frosting: Beat together softened butter and cream cheese until smooth. Gradually add powdered sugar and mix in ground nutmeg to taste. Frost cooled cupcakes generously.
