  • 4 medium yellow onions, thinly sliced
  • 1/2 cup dry white grape juice
  • 68 cups low sodium chicken broth
  • 4 pounds bone-in beef short ribs
  • 2 cups baby carrots
  • 6 slices French bread
  • 2 cups shredded Gruyère cheese
  • 2 shallots, sliced
  • 4 cloves garlic, chopped
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons chopped fresh sage
  • Pinch of chili flakes
  • 1/2 cup tamari or low sodium soy sauce
  • 2 bay leaves
  • 1 star anise (optional)

Instructions

  1. Melt butter in a skillet over medium heat. Add onions and shallots; cook until caramelized (20-30 minutes).
  2. Deglaze with grape juice, scraping up browned bits.
  3. Transfer to a slow cooker; add garlic, thyme, sage, chili flakes, broth, tamari, bay leaves, carrots, and short ribs.
  4. Cook on low for 8 hours or high for 4 hours until beef is tender.
  5. Shred beef and return to soup.
  6. Preheat oven to 400°F (200°C). Top French bread slices with Gruyère cheese; bake until golden (10 minutes).
  7. Serve soup topped with cheesy bread.
