- 6 tablespoons salted butter
- 4 medium yellow onions, thinly sliced
- 1/2 cup dry white grape juice
- 6–8 cups low sodium chicken broth
- 4 pounds bone-in beef short ribs
- 2 cups baby carrots
- 6 slices French bread
- 2 cups shredded Gruyère cheese
- 2 shallots, sliced
- 4 cloves garlic, chopped
- 2 tablespoons fresh thyme leaves
- 2 tablespoons chopped fresh sage
- Pinch of chili flakes
- 1/2 cup tamari or low sodium soy sauce
- 2 bay leaves
- 1 star anise (optional)
Instructions
- Melt butter in a skillet over medium heat. Add onions and shallots; cook until caramelized (20-30 minutes).
- Deglaze with grape juice, scraping up browned bits.
- Transfer to a slow cooker; add garlic, thyme, sage, chili flakes, broth, tamari, bay leaves, carrots, and short ribs.
- Cook on low for 8 hours or high for 4 hours until beef is tender.
- Shred beef and return to soup.
- Preheat oven to 400°F (200°C). Top French bread slices with Gruyère cheese; bake until golden (10 minutes).
- Serve soup topped with cheesy bread.
