  2. Stir in the flour and pour in the wine (if using), scraping up any browned bits from the pot.
  3. Gradually add the broth while stirring, then season with bay leaves, thyme, salt, and pepper. Simmer gently for about an hour.
  4. Preheat your oven broiler. Toast baguette slices on a baking sheet until lightly browned, then top each with grated cheese.
  5. Ladle hot soup into bowls and place cheesy toast on top before serving.
