Ingredients
- 3 tablespoons butter
- 2 large eggs
- 2 medium carrots
- 1 small onion
- 1/2 cup frozen peas
- 3 cloves garlic
- 4 cups cooked chilled rice
- 3 green onions
- 3–4 tablespoons soy sauce
- 1/2 teaspoon toasted sesame oil
Instructions
- Heat 1/2 tablespoon butter in a large sauté pan over medium-high heat. Scramble the eggs until cooked and set aside.
- In the same pan, melt another tablespoon of butter and add diced carrots, onion, peas, and minced garlic. Sauté for about 5 minutes until softened.
- Increase heat to high and add remaining butter. Stir in chilled rice, green onions, soy sauce; cook for another 3 minutes.
- Add scrambled eggs back to the pan and mix everything thoroughly. Stir in toasted sesame oil before serving.
