- ⅛ teaspoon table salt
- 1 ½ cups powdered sugar
- 3 tablespoons dark brown sugar (firmly packed)
- 1–2 tablespoons milk
- 1 ½ tablespoons light corn syrup
- ½ teaspoon vanilla extract
- ⅛ teaspoon ground cinnamon
Instructions
- In a mixing bowl, cream together softened unsalted butter, granulated sugar, and light brown sugar until fluffy. Add eggs and vanilla extract; mix well.
- In another bowl, whisk together cake flour, cornstarch, baking powder, baking soda, and salt. Gradually combine with wet ingredients until blended.
- Chill the dough in plastic wrap for at least 30 minutes.
- Preheat your oven to 350°F (175°C). Roll out chilled dough to ¼ inch thick and cut into rectangles.
- Spread cinnamon filling made from softened butter, light brown sugar, all-purpose flour, ground cinnamon, and salt between two cookie rectangles.
