  • 1 ½ cups powdered sugar
  • 3 tablespoons dark brown sugar (firmly packed)
  • 12 tablespoons milk
  • 1 ½ tablespoons light corn syrup
  • ½ teaspoon vanilla extract
  • ⅛ teaspoon ground cinnamon

Instructions

  1. In a mixing bowl, cream together softened unsalted butter, granulated sugar, and light brown sugar until fluffy. Add eggs and vanilla extract; mix well.
  2. In another bowl, whisk together cake flour, cornstarch, baking powder, baking soda, and salt. Gradually combine with wet ingredients until blended.
  3. Chill the dough in plastic wrap for at least 30 minutes.
  4. Preheat your oven to 350°F (175°C). Roll out chilled dough to ¼ inch thick and cut into rectangles.
  5. Spread cinnamon filling made from softened butter, light brown sugar, all-purpose flour, ground cinnamon, and salt between two cookie rectangles.
  6. Bake for about 14 minutes until lightly golden. Cool completely before frosting with a mixture of powdered sugar, dark brown sugar, milk, corn syrup, vanilla extract, and ground cinnamon.
