Ingredients
- 1 pound boneless skinless chicken breasts
- 1 tablespoon extra virgin olive oil
- 2 teaspoons paprika
- 3 cloves garlic, minced
- 1 lime, juiced
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 tablespoons olive oil
- 1 yellow onion, diced
- 1 large carrot, diced
- 14 ounces diced tomatoes
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1 bay leaf
- 1/4 cup fresh cilantro, chopped
- 1 1/2 cups uncooked white long grain rice
- 3 1/2 cups chicken broth
Instructions
- Marinate the chicken with olive oil, paprika, garlic, lime juice, salt, and pepper for at least 15 minutes.
- In a Dutch oven over medium heat, add olive oil and sauté diced onion until translucent. Add carrot and garlic; cook briefly.
- Stir in diced tomatoes with spices and bay leaf; mix well.
- Layer the marinated chicken on top of the vegetable mixture. Add rice and pour in chicken broth.
- Bring to a boil, then reduce heat to low. Cover and simmer for about 30 minutes until rice is tender and chicken is cooked through.
- Remove from heat and stir in fresh cilantro before serving.
