  • 1 pound boneless skinless chicken breasts
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons paprika
  • 3 cloves garlic, minced
  • 1 lime, juiced
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 1 large carrot, diced
  • 14 ounces diced tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 bay leaf
  • 1/4 cup fresh cilantro, chopped
  • 1 1/2 cups uncooked white long grain rice
  • 3 1/2 cups chicken broth

Instructions

  1. Marinate the chicken with olive oil, paprika, garlic, lime juice, salt, and pepper for at least 15 minutes.
  2. In a Dutch oven over medium heat, add olive oil and sauté diced onion until translucent. Add carrot and garlic; cook briefly.
  3. Stir in diced tomatoes with spices and bay leaf; mix well.
  4. Layer the marinated chicken on top of the vegetable mixture. Add rice and pour in chicken broth.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for about 30 minutes until rice is tender and chicken is cooked through.
  6. Remove from heat and stir in fresh cilantro before serving.
