  • 2 pounds boneless, skinless chicken breast (cut into thin cutlets)
  • 16 ounces penne pasta
  • 6 tablespoons butter
  • 4 cloves garlic (pressed)
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1/3 cup Italian style bread crumbs
  • 1/4 cup grated parmesan cheese
  • Salt to taste
  • Pepper to taste
  • Olive oil

Instructions

  1. Cook the penne pasta according to package directions until al dente; drain.
  2. In a shallow bowl, combine bread crumbs, parmesan cheese, garlic powder, and salt. Dredge chicken cutlets in this mixture.
  3. Heat olive oil in a skillet over medium heat. Cook the coated cutlets for about 5-7 minutes on each side until golden brown; remove and set aside.
  4. In the same skillet, melt butter over medium heat, add pressed garlic and sauté briefly. Stir in flour and cook for one minute.
  5. Gradually whisk in heavy cream and chicken broth until smooth; season with salt and pepper. Simmer until thickened.
  6. Toss cooked pasta into the sauce until well coated, top with sliced chicken cutlets, garnish with additional parmesan cheese and chopped parsley.
