Ingredients

  • 2 cloves garlic
  • 1 kg boneless chicken thighs or drumsticks
  • 2 tablespoons soy sauce
  • 1 can (400 mL) coconut milk
  • 1 tablespoon brown sugar
  • 2 tablespoons fresh lime juice
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine ginger, garlic, soy sauces, coconut milk, brown sugar, lime juice, salt, and pepper. Whisk together.
  2. Add chicken chunks to the marinade and coat well. Cover with plastic wrap and refrigerate for at least 30 minutes (up to 4 hours).
