- 2 cloves garlic
- 1 kg boneless chicken thighs or drumsticks
- 2 tablespoons soy sauce
- 1 can (400 mL) coconut milk
- 1 tablespoon brown sugar
- 2 tablespoons fresh lime juice
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine ginger, garlic, soy sauces, coconut milk, brown sugar, lime juice, salt, and pepper. Whisk together.
- Add chicken chunks to the marinade and coat well. Cover with plastic wrap and refrigerate for at least 30 minutes (up to 4 hours).
- Thread marinated chicken onto soaked skewers with space between each piece.
- Preheat grill to medium-high heat; lightly oil grates.
