Ingredients
- 1 cup unsalted butter (room temperature)
- ⅔ cup powdered sugar
- 1 large egg yolk (room temperature)
- 1 teaspoon vanilla extract
- 2¼ cups all-purpose flour
- ¼ teaspoon salt
- ½ cup mini semisweet chocolate chips
- ⅓ cup Halloween sprinkles (divided)
Instructions
- Cream the butter and powdered sugar in a large mixing bowl using an electric mixer until fluffy.
- Beat in vanilla extract and egg yolk until well combined.
- Gradually add flour and salt on low speed, mixing until just incorporated. Stir in chocolate chips and all but 1 tablespoon of sprinkles.
- For slice-and-bake cookies, form dough into a log, wrap it in plastic, and chill for 2 hours. Slice into rounds; for cut-out cookies, roll out dough, chill, then cut shapes using cookie cutters.
