  • 1/3 cup butterscotch chips, melted and slightly cooled
  • 1/2 cup buttermilk, at room temperature
  • 1 3/4 cups all-purpose flour, spooned and leveled then sifted
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • For the frosting: 1 1/2 cups unsalted butter, softened
  • 1 cup butterscotch chips, melted and slightly cooled
  • 2 1/4 cups powdered sugar, measured then sifted
  • 3/4 tsp butter extract
  • 1/2 tsp vanilla
  • For the ganache drizzle: 1/4 cup butterscotch chips
  • 1 tbsp heavy cream
  • 1/2 tbsp honey

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. Cream together softened butter, brown sugar, and granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla and melted butterscotch chips.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add dry ingredients alternately with buttermilk into the wet mixture until just combined.
  4. Fill cupcake liners two-thirds full with batter and bake for about 15 minutes or until a toothpick comes out clean. Cool completely on a wire rack.
  5. For frosting, beat softened butter until creamy; gradually add melted butterscotch chips and powdered sugar until smooth.
  6. Assemble cupcakes by frosting generously with the butterscotch buttercream and drizzling with ganache made from melted butterscotch chips mixed with warm cream.
