  • ¼ tsp ground nutmeg
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tbsp coconut oil or unsalted butter, melted and cooled slightly
  • 1 large egg, room temperature
  • 1 tsp almond extract
  • ¼ cup pure maple syrup, room temperature
  • 6 tbsp unsweetened vanilla almond milk, room temperature
  • ½ cup diced peaches

Instructions

  1. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. In one bowl, mix together oats, flour, cinnamon, baking powder, nutmeg, and salt.
  3. In another bowl, whisk together melted coconut oil (or butter), egg, almond extract, maple syrup, and almond milk until smooth.
  4. Combine wet and dry ingredients; fold in diced peaches gently.
  5. Chill dough for 30 minutes.
  6. Scoop rounded tablespoons onto the prepared baking sheet and flatten slightly.
  7. Bake for 9–12 minutes until lightly golden. Let cool before enjoying.
