- 1 tbsp coconut oil or unsalted butter, melted and cooled slightly
- 1 large egg, room temperature
- 1 tsp almond extract
- ¼ cup pure maple syrup, room temperature
- 6 tbsp unsweetened vanilla almond milk, room temperature
- ½ cup diced peaches
Instructions
- Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
- In one bowl, mix together oats, flour, cinnamon, baking powder, nutmeg, and salt.
- In another bowl, whisk together melted coconut oil (or butter), egg, almond extract, maple syrup, and almond milk until smooth.
- Combine wet and dry ingredients; fold in diced peaches gently.
- Chill dough for 30 minutes.
- Scoop rounded tablespoons onto the prepared baking sheet and flatten slightly.
- Bake for 9–12 minutes until lightly golden. Let cool before enjoying.
