  • 1 stalk celery, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon smoked paprika
  • 3 cups vegetable broth
  • 4 cups chopped broccoli
  • 2 cups 1% milk
  • 4 oz shredded cheddar cheese
  • 1 cup blended low-fat cottage cheese
  • Salt & pepper to taste

Instructions

  1. In a large pot over medium heat, melt the butter. Add the onion, carrots, and celery; sauté for about 10 minutes until softened. Stir in minced garlic and cook for an additional minute.
  2. Add smoked paprika and flour; stir well. Cook for one more minute to coat the vegetables.
  3. Pour in vegetable broth and add broccoli; bring to a gentle simmer for about 8–9 minutes until broccoli is tender.
  4. Reduce heat and add milk slowly to avoid curdling. Mix in blended cottage cheese and shredded cheddar until smooth.
  5. For creaminess, blend part of the soup (about one cup) until smooth before mixing back into the pot or use an immersion blender directly.
  6. Season with salt and pepper as desired before serving warm.
