Ingredients

Scale
  • 1.5 kg chicken thighs (or breasts)
  • 3/4 cup pineapple juice (canned)
  • 1 1/2 tbsp ginger (freshly grated)
  • 1 1/2 tbsp garlic (freshly grated)
  • 1/2 cup tomato ketchup
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • Sriracha and sesame oil for added flavor

Instructions

  1. In a mixing bowl, whisk together pineapple juice, ginger, garlic, ketchup, soy sauce, brown sugar, Sriracha, and sesame oil until well combined.
  2. Place chicken in a resealable bag or container and pour the marinade over it. Seal tightly and refrigerate for at least 3 hours (preferably 24–48 hours).
  3. Preheat your grill to medium-high heat.
  4. Remove chicken from marinade; allow excess to drip off and brush grill grates with oil.
  5. Grill chicken for about 12 minutes on each side or until cooked through, basting frequently with leftover marinade.
  6. Once done, let rest briefly before serving with garnishes like sliced green onions and grilled pineapple.

Keywords: For maximum flavor, marinate the chicken longer if possible. Avoid using fresh pineapple juice as it can over-tenderize the meat. Customize by adding cayenne pepper for heat or cilantro for freshness.
