  • 1 1/2 cups heavy cream
  • 1 (10.5-ounce) can cream of chicken condensed soup (or equivalent alternative)
  • 1 1/2 cups shredded Parmesan cheese
  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 2 1/2 cups water
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 ounces cream cheese (cut into chunks and softened)
  • 1/2 cup shredded cheddar or colby jack cheese
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Cut the chicken into strips for even cooking.
  2. In the Instant Pot on 'Saute' mode, melt butter and cook chicken strips with chopped onion until mostly cooked through.
  3. Stir in water, heavy cream, and soup until well combined.
  4. Layer uncooked rice evenly on top without stirring; sprinkle seasonings over rice.
  5. Secure the lid and set to 'Pressure Cook' on HIGH for 5 minutes. Release pressure manually when done.
  6. Stir in cream cheese first until melted; then add Parmesan cheese and parsley before serving.
