- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 2 teaspoons dried thyme
- 1 1/2 teaspoons paprika
- 1 teaspoon dried oregano
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 (4-pound) whole roasting chicken
- 1 lemon (halved)
- 2 tablespoons canola oil
- 1 cup chicken stock
Instructions
- In a small bowl, mix salt, pepper, thyme, paprika, oregano, onion powder, and garlic powder.
- Remove giblets from the chicken and pat dry with paper towels. Rub the seasoning mix all over the chicken and stuff the cavity with halved lemon.
- Set your Instant Pot to high sauté mode and heat canola oil. Sear the chicken breast side down for 4-5 minutes until golden brown; then flip and cook for another 4 minutes.
- Place a metal trivet in the pot and add chicken stock. Position the browned chicken on top of the trivet. Set your Instant Pot to high pressure for 28 minutes.
- Allow natural pressure release for 20-30 minutes before letting the chicken rest for an additional 10-15 minutes before serving.
