Ingredients

  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 teaspoons dried thyme
  • 1 1/2 teaspoons paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 (4-pound) whole roasting chicken
  • 1 lemon (halved)
  • 2 tablespoons canola oil
  • 1 cup chicken stock

Instructions

  1. In a small bowl, mix salt, pepper, thyme, paprika, oregano, onion powder, and garlic powder.
  2. Remove giblets from the chicken and pat dry with paper towels. Rub the seasoning mix all over the chicken and stuff the cavity with halved lemon.
  3. Set your Instant Pot to high sauté mode and heat canola oil. Sear the chicken breast side down for 4-5 minutes until golden brown; then flip and cook for another 4 minutes.
  4. Place a metal trivet in the pot and add chicken stock. Position the browned chicken on top of the trivet. Set your Instant Pot to high pressure for 28 minutes.
  5. Allow natural pressure release for 20-30 minutes before letting the chicken rest for an additional 10-15 minutes before serving.
