Ingredients
- 3 boneless, skinless chicken breasts
- 2 ¼ cups chicken broth
- 1 packet taco seasoning
- 15 oz can sweet corn (drained)
- 15 oz can black beans (rinsed and drained)
- 1 can Rotel (diced tomatoes and green chilies)
- 1 medium green bell pepper (sliced)
- 1 medium red bell pepper (sliced)
- 1 medium onion (sliced)
- 1½ cups uncooked long-grain rice
Instructions
- Pour enough chicken broth to cover the bottom of the Instant Pot. Place chicken breasts at the bottom.
- Sprinkle taco seasoning over the chicken evenly.
- Add corn, black beans, and Rotel into separate sections of the pot.
- Layer sliced bell peppers and onion on top.
- Rinse rice thoroughly before adding it evenly to the pot. Pour remaining broth over everything.
- Pressure cook on high for 10 minutes; let depressurize naturally for another 10 minutes before releasing any remaining pressure.
