Description

Italian Tortellini Pasta Salad is a vibrant and delicious dish that combines the delightful flavors of cheesy tortellini with crisp vegetables and a tangy homemade dressing.   • 20 oz. bag refrigerated cheese tortellini
  • 1 cucumber (peeled, sliced and quartered)
  • 1 pint cherry tomatoes (halved)
  • 1 6 oz. can black olives (drained and halved)
  • 1 orange bell pepper (chopped)
  • 2 tablespoons chopped pepperoncini
  • 8 oz. fresh mozzarella balls (quartered)
  • 8 oz. sliced turkey slices (chopped)
  • Italian Dressing

Instructions

  1. Prepare the Italian dressing according to your recipe and refrigerate.
  2. Cook the tortellini in salted boiling water until al dente; drain and rinse with cool water.
  3. In a mixing bowl, combine the cooked tortellini with half of the dressing.
  4. Add cucumber, cherry tomatoes, black olives, orange bell pepper, pepperoncini, mozzarella balls, and chopped turkey slices; toss gently.
  5. Chill for at least 30 minutes before serving and toss with remaining dressing as desired.
