  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying
  • 2 cups Japanese short-grain rice
  • 2 ½ cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • ¼ cup tonkatsu sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon ketchup
  • 1 cup shredded cabbage
  • 2 green onions, sliced
  • Sesame seeds, for garnish
  • Pickled ginger (optional)

Instructions

  1. Rinse the rice under cold water until clear and soak in water for 30 minutes.
  2. Cook the soaked rice in a saucepan with water; bring to a boil, then simmer for 15 minutes without lifting the lid.
  3. Pound the chicken to an even thickness; season with salt and pepper.
  4. Set up a breading station with flour, beaten eggs, and panko breadcrumbs; bread the chicken.
  5. Heat oil in a skillet over medium heat; fry the chicken until golden brown on both sides (4-5 minutes each).
