- 1 tablespoon whole grain mustard
- 1 tablespoon lemon zest
- 1 ½ teaspoons dried oregano
- 2 tablespoons olive oil
- 2 garlic cloves
- ¼ cup lemon juice
- 1 ¼ cups low-sodium chicken stock
- 1 tablespoon unsalted butter
Instructions
- In a bowl, mix mustard, lemon zest (reserve some), oregano, salt, and olive oil to create the spice rub.
- Pat chicken dry and coat with the rub; marinate for at least 15 minutes.
- Heat olive oil in a cast iron skillet over medium-high heat; sear chicken thighs skin-side down until golden brown (about 5–7 minutes).
- Add smashed garlic and pour in lemon juice and chicken stock; bring to simmer.
- Transfer skillet to preheated oven at 400°F (200°C) and bake for 20–25 minutes until internal temperature reaches 165°F (75°C).
- Remove chicken; make sauce by whisking butter and flour in the skillet, gradually adding stock until desired consistency.
- Return chicken to skillet to coat in sauce before serving.
