  • 32 oz chicken broth
  • 1 medium onion chopped
  • 45 russet potatoes medium/small, peeled and cubed (½”–1” pieces)
  • 13 oz turkey kielbasa chopped
  • 23 tablespoons olive oil divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 6 oz shredded sharp cheddar cheese
  • 1/3 cup heavy cream
  • 2 cups chopped kale
  • 1 ½ tablespoons lemon juice

Instructions

  1. Peel and cube the potatoes; set aside.
  2. In a large soup pot, heat olive oil over medium-high heat. Sauté chopped onion and turkey kielbasa until onions soften.
  3. Remove sautéed ingredients and set aside.
  4. Add cubed potatoes, garlic powder, onion powder, thyme, salt, black pepper, red pepper flakes to the pot. Pour in chicken broth and lemon juice; bring to a boil.
  5. Lower heat; partially mash about 75% of the potatoes while keeping some whole.
  6. Stir in heavy cream and gradually add cheddar cheese until melted.
  7. Return sautéed turkey kielbasa and onion mixture to the pot along with chopped kale; mix well.
  8. Serve hot, garnished with extra shredded cheese and herbs.
