  • 1 (1.5 lb) bag Baby Boomer Little Potatoes
  • 2 lbs boneless, skinless chicken breasts
  • 1/2 cup prepared ranch dressing
  • 2 cups Mexican Cheese Blend
  • 1 cup cooked and crumbled turkey bacon (or omit for vegetarian option)
  • 1/2 cup diced green onion

Instructions

  1. Preheat the oven to 450°F. Cut potatoes into 1-inch cubes and mix with 1/4 cup ranch dressing, salt, and pepper in a bowl.
  2. Transfer the coated potatoes to a greased 9 x 13-inch baking dish. Bake for 30 minutes, stirring every 10 minutes.
  3. While potatoes cook, cut chicken into cubes and mix with remaining ranch dressing, salt, and pepper.
  4. Once the potatoes are done, layer the seasoned chicken on top. Cover with foil and reduce oven temperature to 400°F. Bake for an additional 20 minutes or until chicken reaches an internal temperature of 165°F.
  5. Remove foil and top with cheese blend, turkey bacon (if using), and green onions. Return to oven for another 8-10 minutes until cheese is melted.
