Ingredients
- 1 (1.5 lb) bag Baby Boomer Little Potatoes
- 2 lbs boneless, skinless chicken breasts
- 1/2 cup prepared ranch dressing
- 2 cups Mexican Cheese Blend
- 1 cup cooked and crumbled turkey bacon (or omit for vegetarian option)
- 1/2 cup diced green onion
Instructions
- Preheat the oven to 450°F. Cut potatoes into 1-inch cubes and mix with 1/4 cup ranch dressing, salt, and pepper in a bowl.
- Transfer the coated potatoes to a greased 9 x 13-inch baking dish. Bake for 30 minutes, stirring every 10 minutes.
- While potatoes cook, cut chicken into cubes and mix with remaining ranch dressing, salt, and pepper.
- Once the potatoes are done, layer the seasoned chicken on top. Cover with foil and reduce oven temperature to 400°F. Bake for an additional 20 minutes or until chicken reaches an internal temperature of 165°F.
- Remove foil and top with cheese blend, turkey bacon (if using), and green onions. Return to oven for another 8-10 minutes until cheese is melted.
