  • 23 celery stalks (diced)

  • 1 bay leaf
  • 3/4 cup ditalini pasta
  • 6 cups chicken stock
  • 1/2 cup low-fat cream cheese
  • 1/2 cup half-and-half
  • 2 cups shredded rotisserie chicken
  • 1/3 cup grated Parmesan cheese
  • 2 cups fresh baby spinach (or kale)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, carrot, and celery for about 5 minutes until softened.
  2. Add garlic and cook for another minute. Stir in sun-dried tomatoes and chili flakes.
  3. Add bay leaf, ditalini pasta, and chicken stock; bring to a boil. Reduce heat and simmer for 10-12 minutes until pasta is nearly cooked.
  4. Stir in cream cheese and half-and-half; let simmer until creamy.
  5. Mix in shredded chicken, Parmesan, and spinach; cook for an additional 1-2 minutes until heated through.
  6. Season with salt and pepper to taste before serving hot.
