  • 1 cucumber
  • ½ cup red onion
  • 1 pint baby tomatoes
  • 6 ounces kalamata olives
  • 6 ounces feta cheese
  • 1 Tablespoon fresh parsley
  • 1 Tablespoon fresh cilantro
  • 1 Tablespoon minced garlic
  • 2 Tablespoons apple vinegar
  • 1 Tablespoon lemon juice
  • 3 Tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 2 teaspoons honey
  • ½ teaspoon dried oregano
  • ½ teaspoon ground cumin
  • ¼ teaspoon sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. In a small bowl, whisk together apple vinegar, lemon juice, olive oil, Dijon mustard, honey, dried oregano, ground cumin, sea salt, and black pepper. Set aside.
  2. In a large mixing bowl, combine chickpeas, diced cucumber, red onion, halved baby tomatoes, kalamata olives, crumbled feta cheese (reserving some for garnish), minced garlic along with parsley and cilantro.
  3. Pour the dressing over the salad ingredients and gently toss until evenly coated.
  4. Cover the bowl and chill in the refrigerator for at least one hour to enhance flavors.
  5. Before serving cold, garnish with reserved feta cheese and extra herbs.
