  • 2 tablespoons avocado oil
  • ¾ teaspoon salt
  • 1 cup reduced-sodium vegetable broth (warmed)
  • ¾ cup finely chopped pecans
  • ½ cup + 1 tablespoon brown sugar
  • 1 teaspoon cinnamon (divided)
  • 2 tablespoons pure maple syrup

Instructions

  1. Preheat oven to 425°F.
  2. Peel sweet potatoes, trim ends, and cut into 1-inch slices.
  3. Whisk together 4 tablespoons melted butter, avocado oil, and salt; coat potato slices with the mixture.
  4. Arrange slices in a baking dish and bake for 15 minutes. Flip, then bake for another 15 minutes.
  5. Pour warmed vegetable broth over the potatoes; bake for an additional 10 minutes.
  6. For the pecan crumble, mix remaining melted butter, pecans, brown sugar, and cinnamon until combined.
  7. Poke holes in each potato slice, drizzle with maple syrup mixture, and top with pecan crumble.
