Ingredients
- 2 lbs chicken wings
- 2 tbsp soy sauce
- 1 tbsp apple cider vinegar
- 1 tbsp minced garlic
- 1 tsp ground white pepper
- ½ cup cornstarch
- ¼ cup all-purpose flour
- 1 tsp baking powder
- Neutral oil for frying
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp paprika
- ½ tsp MSG (optional)
Instructions
- In a bowl, mix soy sauce, apple cider vinegar, garlic, white pepper, salt, and sugar to create the marinade. Add chicken wings and toss to coat. Refrigerate for at least 1 hour.
- Combine cornstarch, flour, and baking powder in another bowl.
- Remove wings from the marinade and coat them in the cornstarch-flour mixture.
- Heat oil in a deep pan or wok to 350°F (175°C). Fry wings in batches for about 6-7 minutes until golden but not fully crispy. Let rest on a wire rack.
- Increase oil temperature to 375°F (190°C) and fry wings again for an additional 3-4 minutes until deep golden brown.
- Remove from oil and season immediately with garlic powder, onion powder, paprika, and MSG if desired.
