  • 2 lbs chicken wings
  • 2 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1 tbsp minced garlic
  • 1 tsp ground white pepper
  • ½ cup cornstarch
  • ¼ cup all-purpose flour
  • 1 tsp baking powder
  • Neutral oil for frying
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp paprika
  • ½ tsp MSG (optional)

Instructions

  1. In a bowl, mix soy sauce, apple cider vinegar, garlic, white pepper, salt, and sugar to create the marinade. Add chicken wings and toss to coat. Refrigerate for at least 1 hour.
  2. Combine cornstarch, flour, and baking powder in another bowl.
  3. Remove wings from the marinade and coat them in the cornstarch-flour mixture.
  4. Heat oil in a deep pan or wok to 350°F (175°C). Fry wings in batches for about 6-7 minutes until golden but not fully crispy. Let rest on a wire rack.
  5. Increase oil temperature to 375°F (190°C) and fry wings again for an additional 3-4 minutes until deep golden brown.
  6. Remove from oil and season immediately with garlic powder, onion powder, paprika, and MSG if desired.
