Ingredients
- 1 ½ pounds boneless, skinless chicken breasts
- 2 tablespoons butter
- 1 tablespoon extra-virgin olive oil
- ½ small red onion, thinly sliced
- 2 garlic cloves, pressed or minced
- ¼ cup balsamic vinegar
- 1 tablespoon brown sugar or honey
- 2 cups cherry tomatoes
- 1½ tablespoons chopped fresh rosemary leaves
- ¼ cup water or chicken broth
Instructions
- Season the chicken cutlets with salt and pepper. In a large skillet, heat butter and olive oil over medium-high heat. Add chicken and brown on each side for about 3 minutes. Remove from skillet.
- Reduce heat to medium and add remaining butter. Sauté sliced onion and minced garlic until tender.

- Return chicken to the skillet and cook for an additional 3-4 minutes until fully cooked.
