Ingredients
- 5 chicken thighs, skin on, bone in (about 1 kg / 2 lb)
- 1 – 2 lemons, use the zest + 4 tbsp lemon juice
- 1 tbsp dried oregano
- 4 garlic cloves, minced
- 1/2 tsp salt
- 1 1/2 tbsp olive oil, separated
- 1 small onion, finely diced
- 1 cup (180g) long grain rice, uncooked
- 1 1/2 cups (375 ml) chicken broth / stock
- 3/4 cup (185 ml) water
- 1 tbsp dried oregano
- 3/4 tsp salt
- Black pepper
- Finely chopped parsley or oregano (optional)
- Fresh lemon zest (highly recommended)
Instructions
- Marinate the chicken thighs with lemon juice, zest, garlic, oregano, salt, and half of the olive oil in a ziplock bag for at least 20 minutes.
- Preheat your oven to 180°C (350°F).
- In a heavy-based skillet, heat the remaining olive oil over medium-high heat and sear the marinated chicken until golden brown on both sides. Remove from skillet.
- Sauté diced onions in the same skillet until translucent.
- Add uncooked rice, chicken broth, water, reserved marinade, remaining oregano, salt, and pepper to the skillet. Stir well.
- Place seared chicken on top of the rice mixture, cover with a lid or foil, and bake for about 35 minutes.
- After baking, remove the lid and continue cooking for another 10 minutes until liquid is absorbed. Let rest before serving.
