  • 7oz / 200g cherry tomatoes
  • 1 medium cucumber
  • ½ red onion
  • 3oz / 90g sun-dried tomatoes
  • 2 tablespoons extra virgin olive oil
  • Juice of 1 large lemon
  • Salt to taste
  • 3.5oz / 100g feta cheese
  • Fresh parsley

Instructions

  1. Boil the orzo pasta according to package instructions until al dente, then drain and cool.
  2. While the pasta cooks, chop the cherry tomatoes, cucumber, sun-dried tomatoes, red onion, and parsley.
  3. Whisk together olive oil, lemon juice, and salt in a small bowl.
  4. Combine the warm orzo with dressing and reserved pasta water in a large bowl.
  5. Add chopped vegetables and crumbled feta; mix gently and refrigerate for about 15 minutes to let flavors meld.
