Ingredients
- 9oz / 250g orzo pasta
- 7oz / 200g cherry tomatoes
- 1 medium cucumber
- ½ red onion
- 3oz / 90g sun-dried tomatoes
- 2 tablespoons extra virgin olive oil
- Juice of 1 large lemon
- Salt to taste
- 3.5oz / 100g feta cheese
- Fresh parsley
Instructions
- Boil the orzo pasta according to package instructions until al dente, then drain and cool.
- While the pasta cooks, chop the cherry tomatoes, cucumber, sun-dried tomatoes, red onion, and parsley.
- Whisk together olive oil, lemon juice, and salt in a small bowl.
- Combine the warm orzo with dressing and reserved pasta water in a large bowl.
- Add chopped vegetables and crumbled feta; mix gently and refrigerate for about 15 minutes to let flavors meld.
