  • 4 small–medium chicken breasts (or 2 large, halved)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • ½ cup grated Parmesan cheese
  • ½ cup panko breadcrumbs
  • 34 cloves garlic, minced
  • 1 cup light cream or heavy cream
  • 1 tablespoon Italian seasoning or oregano
  • ½ cup Parmesan cheese, grated
  • 1 cup spinach, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper.
  3. In a bowl, mix panko breadcrumbs and Parmesan cheese.
  4. Heat olive oil in a skillet over medium heat. Coat each chicken breast in the breadcrumb mixture.
  5. Cook chicken in the skillet for 3-4 minutes on each side until golden brown.
  6. Transfer chicken to a baking sheet and bake for 15 minutes until cooked through.
  7. For the sauce, sauté minced garlic in the skillet, then add cream and seasoning. Simmer until thickened and stir in Parmesan.
