  • 2 cups blackberries
  • ½ cup water
  • 1 tablespoon lemon juice
  • ¾ cup sugar
  • 8 ounces goat cheese
  • 2 lemons (zest)
  • 4 teaspoons raw sugar
  • 2 teaspoons fresh thyme (minced)
  • 1 egg

Instructions

  1. To make the blackberry jam, combine blackberries, water, lemon juice, and sugar in a saucepan. Cook over medium heat for 20-30 minutes until thickened; mash the berries as you cook.
  2. Thaw puff pastry sheets for about 20-25 minutes, then roll each into a rectangle. Spread half of the cooled blackberry jam on one sheet and crumble half of the goat cheese on top.
  3. Cut the dough into strips, fold them over to enclose the filling, then twist gently to form spirals.
  4. Preheat oven to 400°F (200°C). Place twists on a baking sheet lined with parchment paper. Brush with beaten egg and sprinkle with raw sugar, lemon zest, and thyme.
  5. Bake for 16-18 minutes until golden brown and allow to cool before serving.
