Instructions

  1. Line a sheet pan with parchment paper and set aside.
  2. In a medium saucepan, combine sugar and water; stir well before adding corn syrup. Cook over medium heat until it reaches a gentle boil.
  3. Attach a candy thermometer and cook until the mixture reaches 250°F (121°C).
  4. Stir in the salted roasted peanuts and cook until the thermometer reads 300°F (149°C).
  5. Remove from heat; quickly mix in butter, baking soda, and vanilla (the mixture will foam).
  6. Pour onto the prepared sheet pan and spread evenly while hot.
  7. Allow cooling for at least 30 minutes before breaking into pieces.
