Ingredients
- 2 tablespoons butter
- 2 and 1/2 cups chopped pecans
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup brown sugar
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 and 1/2 cups brown sugar
- 3/4 cup light corn syrup
- 2 tablespoons melted butter
- 1 teaspoon vanilla
Instructions
- Preheat your oven to 350°F (175°C). Lightly spray a mini muffin pan with cooking spray.
- In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped pecans and toast for about 10 minutes until golden.
- In an electric mixer, beat the softened butter and 1/2 cup brown sugar until creamy. Add the flour and salt; mix until combined.
- Press a heaping tablespoon of dough into each muffin cup to form crusts.
- In a bowl, combine the remaining brown sugar, light corn syrup, melted butter, and vanilla. Fold in the toasted pecans and spoon into each crust until three-quarters full.
- Bake for about 15 minutes or until the crusts are golden brown. Let cool for 5 minutes before adding more filling if desired.
