  • 2 tablespoons butter
  • 2 and 1/2 cups chopped pecans
  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup brown sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 and 1/2 cups brown sugar
  • 3/4 cup light corn syrup
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly spray a mini muffin pan with cooking spray.
  2. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped pecans and toast for about 10 minutes until golden.
  3. In an electric mixer, beat the softened butter and 1/2 cup brown sugar until creamy. Add the flour and salt; mix until combined.
  4. Press a heaping tablespoon of dough into each muffin cup to form crusts.
  5. In a bowl, combine the remaining brown sugar, light corn syrup, melted butter, and vanilla. Fold in the toasted pecans and spoon into each crust until three-quarters full.
  6. Bake for about 15 minutes or until the crusts are golden brown. Let cool for 5 minutes before adding more filling if desired.
