  • 3 large eggs + 2 egg yolks, at room temperature
  • 2 tablespoons all-purpose flour
  • 6 tablespoons unsalted butter
  • 2/3 cup dark brown sugar, packed (for topping)
  • 1/2 teaspoon ground cinnamon (for topping)
  • 1/3 cup heavy cream
  • 1/4 teaspoon salt (for topping)
  • 2 cups pecans, whole or chopped (for topping)
  • 1 teaspoon vanilla extract (for topping)

Instructions

  1. Preheat oven to 325°F (160°C).
  2. For the crust: Combine crushed pecans, graham cracker crumbs, sugar, cinnamon, salt, and melted butter. Press into a 9-inch springform pan.
  3. For the filling: Beat cream cheese until smooth. Add sour cream, sugars, cinnamon, and vanilla; mix well. Add eggs one at a time until just combined. Fold in flour gently.
  4. Pour filling over crust and bake for about 75 minutes or until slightly jiggly.
  5. For the topping: Cook butter, brown sugar, and cinnamon in a saucepan until bubbly; add cream and stir in pecans. Pour over cooled cheesecake.
