Instructions
- In a heavy-bottomed pot, heat olive oil over medium heat. Add diced onion, carrot, and celery; sauté for 7-8 minutes until softened.
- Stir in finely chopped garlic, red chili flakes, and Italian seasoning; cook for another minute.
- Add cubed potatoes and vegetable stock; bring to a boil, then reduce heat and simmer for about 15 minutes until potatoes are fork-tender.
