- ¼ cup water
- 4–5 white button mushrooms, sliced
- 1 cup broccoli florets
- 20 green beans, sliced into thirds
- 1 large carrot, sliced thin on a bias
- ¼ cup small diced onion
- 1 tablespoon sesame oil
- 1 tablespoon extra virgin olive oil
- ¼ cup reduced-sodium soy sauce
- ¼ cup rice apple vinegar
- 1 tablespoon sugar or honey
- 1 teaspoon grated fresh ginger
- 1 tablespoon cornstarch
- 1 tablespoon cold water
Instructions
- In a small bowl, whisk together cornstarch and cold water to create a slurry. Add soy sauce, rice apple vinegar, sugar (or honey), and ginger. Set aside.
- Prep the vegetables by slicing the carrot, mushrooms, green beans, and onion.
- Heat olive oil and sesame oil in a large skillet over medium-high heat. Add frozen potstickers in a single layer; fry until browned (about 3–4 minutes). Add water, cover, and cook for another 3–4 minutes. Remove potstickers and set aside.
- In the same skillet, cook mushrooms and onions until browned (3–4 minutes). Remove and set aside.
- Cook broccoli in the skillet for about 3–4 minutes until tender but vibrant green; remove from heat.
- Cook green beans and carrots in the skillet for about 3–4 minutes until tender-crisp. Return all cooked veggies to the skillet.
- Add potstickers back to the skillet along with the sauce mixture. Stir gently to coat everything evenly, cooking until the sauce thickens slightly (2–3 minutes). Serve warm garnished with sesame seeds and green onions.
