- 450 g dark brown sugar
- 560 g pumpkin purée (room temperature)
- 150 g oil (room temperature)
- 4 eggs (room temperature)
- 2 tsp vanilla extract
- 300 g butter
- 150 g plant-based cream cheese
- 540 g powdered sugar
- 2 tsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and lining with parchment paper.
- In one bowl, whisk together all-purpose flour, baking powder, baking soda, salt, and pumpkin spice.
- In another bowl, mix dark brown sugar, pumpkin purée, oil, eggs, and vanilla until smooth.
- Gradually combine the dry ingredients into the wet mixture until just incorporated.
- Divide batter between prepared pans and bake for approximately 25 minutes or until a toothpick comes out clean.
- Allow cakes to cool for 10 minutes in pans before transferring to a cooling rack.
- For frosting, beat together butter, plant-based cream cheese, powdered sugar, ground cinnamon, and vanilla until creamy.
